Sunday Dinners: Lynette's English Muffin Bread

I love to cook, but for some reason I just cannot make bread. My friend Lynette is super talented. She always tells me that I CAN make THIS recipe, but I just keep letting her make it for me because it just tastes so much better that way.

Lynette's English Muffin Bread


7 1/2 cups flour
4 1/2 tsp. sugar
1 T salt
1/4 tsp. baking soda
3 envelopes active dry yeast
3 cups milk
3/4 cup water
corn meal

Grease 2 large loaf pans and sprinkle with cornmeal if desired. Set aside 3 cups flour. In a large bowl, combine remaining flour, sugar, soda, salt, and yeast. Combine milk and water and heat until quite warm. Add liquids to dry mixture and beat well. Stir in enough of reserved flour to make a stiff batter (batter will be sticky). Spoon into prepared loaf pans. Sprinkle with a little more cornmeal. Cover and let rise about 30 minitues (don't let it rise too much!). Bake at 400 degrees for 25 minutes. Remove from pan and cool.

*This bread also tastes great with shredded cheese and Italian seasonings mixed into the batter.

Tried it...loved it. my picky 2 year old devoured it. Totally yummy and we'll be making this again!
