Sunday Dinners: Crustless Spinach Quiche

Crustless Spinach Quiche
AKA in our home as "Cheesy Eggs”

We make this dish a lot in our home. I always have these ingredients on hand and it's chock full of spinach. My kids LOVE when I tell them we're having Cheesy Eggs for dinner.

INGREDIENTS

8 oz. cream cheese
1 cup milk
4 eggs or 1 cup egg substitute
1 cup cheese (Parmesan, cheddar, or Swiss), shredded
1 pkg. frozen chopped spinach, cooked and drained
1 cup diced ham (optional)

other ingredients that I add if I have on hand: chopped tomatoes, mushrooms

DIRECTIONS

1. Combine cream cheese and milk in a saucepan and cook over medium heat until cream cheese is melted. Remove from heat.

2. Add eggs, cheese, and spinach, and ham to cream cheese mixture.

3. Bake in a greased pie plate at 350 degrees for 40 minutes or until set.
